Set in the delightful scenery of piazza Barberini, in the heart of the ancient historic centre of Barberino val d’Elsa, il Canto di Baccio Wine Bar & Shop is a secluded and intimate corner, an ideal spot to taste La Spinosa’s organic wines paired with flavoursome snacks and appetisers prepared with local typical products.

Our vineyards are cultivated in compliance with organic specifications and the mechanisation of labour is minimised. In fact, we believe that a good wine is primarily born from the vineyard, through accurate grape cultivation and selection.
After-care treatments are extremely limited, this is why our wines’ sulphur dioxide rates are even lower than those prescribed by organic regulations.

Our way of doing agriculture is to let our products express the characteristics of the soil and the peculiarities of every year of production. Our cereals, our Oil and above all our Wines, faithfully reflect the character of the land and the period in which they were born, grown and harvested.
Our work is carried out with a predominant use of human labour, respecting local traditional practices that are a direct inheritance of the ancient Tuscan farming culture.
